A: Absolutely.
Whether you’re on a PC or a Mac, simply navigate to iTunes’ Preferences → Advanced → Importing, and change “Import Using” to “WAV Encoder”.
The “Automatic” settings should suffice, here, though you’re free to change the sample rate, sample size, and number of channels in the “Settings” pulldown menu.
